Spanish Cuisine: Albaricoques, Tortitas Con Chocolate, Crema de Cacahuete

I’ve been in the kitchen cooking. Again. I believe that makes it twice in as many months.

My first recent kitchen adventure was a delicious and healthy breakfast creation: Pear yogurt, Special K cereal, and dried apricots. I chopped up the dried apricots myself. By hand. With a sharp knife. (Really. I did.) Then I artfully placed the dried fruit onto the yogurt and cereal.

This evening, I served up (for myself) a superb plate of tortitas de arroz con chocolate, generously spread with crema de cacahuete, and topped by a dollop of mermelada de albaricoque. Sadly, the masterpiece was consumed nearly as quickly as it was created. Next time, I think I’ll double the recipe. And speaking of recipes, if you’d like either of these, I’d be very happy to share.
